Lower grit numbers (#320, #1000) are coarser and remove more metal — used for edge repair and initial sharpening. Higher grit numbers (#5000, #8000) are finer and polish the edge — used for finishing and refining. Most sharpening progressions move from coarse to fine, ending at the grit appropriate for the tool's purpose.
Most Suehiro CERAX and traditional water stones benefit from soaking in clean water for 5–10 minutes before use. Soaking saturates the stone and produces a proper sharpening slurry. Splash-and-go stones only need surface wetting. Always check the specific stone's instructions, and never store soaking stones in water long-term.
For kitchen knives, a #1000 medium stone like the CERAX 1010 or KR-1 is the ideal starting point — it sharpens dull edges efficiently. Pair it with a #3000–#6000 finishing stone such as the Ouka 3000 or CERAX 6060. The two-sided CR-4800 (#1000/#6000) covers both stages in a single stone.
Yes. Suehiro stones are widely used by professional woodworkers for sharpening Western and Japanese chisels, plane irons, carving tools, and spokeshave blades. For hand tools that take fine shavings, finishing at #6000 or #8000 produces the polished edge needed for clean cuts in hardwood.
